Throw a gala! Chopped pecans and granola add the crisped to this easy Gala apple dish. Don’t forget a dollop of ice cream (fat free of course!) for that finishing touch.
3/4 cup unbleached flour
1/2 cup light brown sugar
1/2 cup granulated sugar, separated
1 tsp ground cinnamon, divided
pinch of salt
1/3 cup Smart Balance® Original Buttery Spread
3/4 cup chopped pecans
1/3 cup granola cereal
1 tbsp cornstarch
6 cups Gala apples, peeled, cored and chopped
1 tbsp fresh lemon juice
4 cups fat-free ice cream (or frozen yogurt), for serving
Mix flour, brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, nutmeg and salt together in a bowl.
Combine butter in with the mixture using a fork or your fingers until coarse crumbs form. Stir in chopped pecans and granola and set aside.
Whisk together remaining 1/4 cup sugar, cornstarch and remaining 1/2 teaspoon cinnamon.
Place the apples in the bottom of the slow cooker, then stir in the cornstarch mixture and squeeze the lemon juice over the top; toss well.
Sprinkle the pecan-crumb topping over the top. Cover and cook on LOW for 4 1/2 hours, or until the apples are tender.
After cooking time is complete, uncover the slow cooker to allow the crisp topping to harden for about an hour. Serve this dish with 1/2 cup scoop reduced fat vanilla ice cream and enjoy!
Makes 12 servings. 1/2 cup apple crisp, 1/3 cup fat free ice cream per serving.
