The Best No-Bake Cookies – Gluten Free
- 1/2 cup coconut oil or real unsalted butter (not margarine)
- 1 cup honey
- 1/2 cup cocoa powder
- 1/2 cup all-natural peanut, almond or sunflower seed butter
- 3 cups unsweetened coconut flakes
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- In a pot, combine butter, honey and cocoa powder.
- Bring to a boil, and boil for 1 minute, whisking constantly.
- Remove from the heat.
- Stir in peanut butter, salt and vanilla.
- Stir in coconut flakes.
- Scoop cookies onto a parchment lined sheet tray.
- Refrigerate to set.
Store these in the refrigerator or freeze.
